I love a good pasta salad. This is one of my favorite ones. No cheese needed to make this vegan salad! Just simple flavorful ingredients.
Recipe for Easy Vegan Summer Pasta Salad
- 8 oz fusilli pasta
- 2 Tbsp olive oil
- 2 cloves of crushed garlic
- lemon juice
- 1/2 tsp red chili flakes
- 1 ripe avocado
- 1/2 cup kalamata olives
- 1/2 cup quartered small tomatoes
- 1/3 cup basil
- salt
- fresh ground black pepper
Bring a pot of heavily salted water to boil. Cook the the pasta to the packages instructions. Drain the pasta and rinse with cold water. Whilst cooking your pasta assemble the rest of the ingredients. In a large bowl mix together olive oil, garlic, lemon juice, and chili. Toss the pasta with the oil. Add the avocado, tomatoes, olives and mix well. Season with salt and pepper to taste. Sprinkle the basil over the top and serve.
There you go. Super easy. Super delicious!
